1 small white onion, peeled and sliced
3 cloves garlic, crushed
1 teaspoon dry mustard
3 tablespoons butter
2 teaspoons Worcestershire sauce
2 tablespoons olive oil
1 cup evaporated milk
1 cup bacon strips
3 eggs
1 teaspoon Creole seasoning
1 (10 ounce) package dry Italian sausage mix
1/2 cup bacon grease
In a small bowl, mix the mustard, butter, Worcestershire sauce, olive oil and evaporated milk. Mix until well. Place the onion, garlic and 1 teaspoon of mustard mixture in the center of the onion and garlic slices. Place the onion slices over the casserole.
Arrange the bacon in a single layer on a large skillet or rack and drizzle with oil.
Bake uncovered for about 30 minutes in the preheated oven. Remove from oven and loosen bacon strips. Place potatoes under baking sheet and sprinkle with Creole seasoning and bacon grease. Bake for 10 minutes, or until potatoes are tender. Serve hot or cold.
