Pot Wedges Recipe

Ingredients

1 large Dutch oven baking sheet

1/2 cup butter

4 cups white sugar

2 eggs

1 cup water

1 cup all-purpose flour

2 teaspoons baking powder

1 1/2 teaspoons salt

3 1/4 teaspoons ground cinnamon

3 1/4 teaspoons ground nutmeg

3 1/2 cup vegetable oil for frying

1 (12 fluid ounce) can evaporated milk

4 eggs

2 teaspoons vanilla extract (optional)

1/3 cup unsalted butter, divided

1/2 cup grated pecans

Directions

Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch baking dish with non-stick cooking spray.

Preheat oven to 350 degrees F (175 degrees C). Prepare the pastry by breaking 1/2 of the dough into 4 pieces. Bring a large pot of water to a boil. Braze the dough, then turn out onto a towel and cover with cold water. Let stand for 5 minutes.

Separate dough pieces and scrape off any excess drippings. Stir in the remaining flour, baking powder, salt, cinnamon, nutmeg, oil and milk. Gently stir in the eggs and vanilla extract. Pour into prepared baking dish.

Fill baking dish half way with vegetable oil to allow liquid to drain. Heat oven to 400 degrees F (200 degrees C). Bake in the preheated oven for 20 minutes.

This was great! It was a little time intensive, but I was able to pull it together after the fact and keep it in my collection. It was a little runny, but that might be because I used a garlic powder pillbox. It turned out great. Thanks for sharing!
