1 cup ketchup
2 tablespoons olive oil
1/2 cup honey
1 teaspoon paprika
4 skinless, boneless chicken breast halves - cut into 1/2 inch strips
1 teaspoon dried oregano
1/4 cup freshly grated Parmesan cheese
1 1/3 cup butter, melted
4 tablespoons molasses
1/4 teaspoon dried basil
salt to taste
In a large bowl, mix ketchup, olive oil, honey, paprika, peeled chicken strips, oregano, Parmesan cheese, melted butter or margarine and salt. Cover and refrigerate at least 1 hour to allow the chicken to cook.
Preheat oven to 350 degrees F (175 degrees C). Place chicken strips in a 9x13 inch baking dish. Pour ketchup mixture over chicken and sprinkle with molasses and basil.
Bake 2 hours in the preheated oven. About 15 minutes before chicken is cooked, remove chicken strips and lay them in the baking dish. Turn approximately 1/2 inch to 1/2 inch browned, and spoon over chicken. Remove skin from chicken and dry using a measuring cup. Season with salt. Brush ketchup mixture on all sides.
