2 tablespoons olive oil
1 cup minced onion
3 cloves garlic, minced
1 tablespoon Italian seasoning
1 teaspoon salt
2 pounds shredded Cheddar cheese
4 cups water
1 tablespoon lemon juice
1 teaspoon garlic powder
1 teaspoon seasoned salt
2 teaspoons dried parsley
Heat olive oil in a large saucepan; cook and stir onion, garlic and Italian seasoning. Stir until the onion is translucent. Stir in salt and mix well. Pour the water into the pan and cook over medium heat stirring occasionally. Remove from heat and pour over the bottom of the pan. Fold lemon juice into the mixture and pour over the cheese and cheese mixture.
Pour in water, lemon juice and garlic powder. Bring to a simmer.
Gently stir in parsley and sprinkle with salt. Reduce heat to low and simmer for about 30 minutes.
