4 medium onions, peeled and thinly sliced
5 medium carrots, peeled and thinly sliced
2 medium yellow beans, cooked
1/2 onion, finely chopped
4 leaves spinach
1 1/2 teaspoons grated lemon zest
1/4 teaspoon crushed red pepper
6 cloves garlic, minced
3 (36 ounce) cans beef broth
1 tablespoon vegetable oil
3 teaspoons vegetable oil
1 (2 fluid ounce) jigger lemon-lime flavored carbonated beverage
Saute onions and carrots in a mixing dish for 5 minutes. Stir until tender. Toss carrots with onions; spoon into an 8-inch square pan. Pour broth over vegetables. Sprinkle with lemon zest and crushed red pepper. Cover saucepan; refrigerate at least 1 hour before serving.
