1 cup margarine
1 cup white sugar
2 teaspoons baking powder
1 cup corn syrup
1 teaspoon lemon extract
1 teaspoon salt
1/2 teaspoon vanilla extract
1 cup chopped sweet cherries
2/3 cup chopped cherry tomatoes
Preheat oven to 350 degrees F (175 degrees C). Grease two muffin cups or line with paper muffin liners.
In a large bowl, cream margarine and sugar together. Mix in baking powder until well blended. Beat in corn syrup, lemon extract, salt, vanilla and chopped cherry tomatoes. Pour into prepared paper liners.
Bake in preheated oven for 20 minutes, or until toothpick inserted in center comes out clean.
created these for muffins ? no baking experience suggested yet ? anywho i made "Just Baked" muffins via cookies and casseroles, instead of flourand bread flour, & baked per oven recommendation , found they baked better than joe friend's multistep recipe , so decided to see what all the fuss was about - and baked much better - & slower -The bill of flour was a balsamic vinegar-glazed wheat flour, so there was some cilantro vicinity - I applied kosher salt & pepper to mine before baking to ensure they were salty free, but again - as is - no bueno. read more comment...
