1 (8 ounce) package shredded Cheddar cheese, shredded
1/2 pound unsalted butter
1 cup fresh lemon juice
1 tablespoon olive oil
1 teaspoon salt
Place grits of the crushed compacted cheese or cottage cheese in a medium heat-proof bowl. Dissolve 2 tablespoons vegetable oil in water; stir. Place minced beef in a medium bowl along with 3/4 cup lemon juice, 1 tablespoon oil and salt. Bring to a boil; reduce heat to medium-low, cover (cover) and simmer 20 minutes, or until cheese has melted and mixture is smooth.
