3/4 cup mayonnaise
1/8 cup balsamic vinegar
2 teaspoons Italian saute sauce
1 (8.5 ounce) can seitan pasta, drained
1/2 medium heavy white onion, sliced
1 large green bell pepper
salt and pepper to taste
4 ounces spinach, sliced
In a saucepan over medium heat, mix mayonnaise, vinegar, saute sauce and seitan. Bring approximately to a boil, stirring frequently. Remove skillet from heat; and stir in pasta, onion, bell pepper and salt and pepper.
Till all ingredients combine. Pour mixture into 12 individual 13x13 inch (8.5 inch) ungreased 13x9 inch (3.5 inch) casserole dish. Spoon toppings on top of tomato mixture. Cover and chill less than 3 hours.
This is an excellent recipe for the home cook as it yields a delicious result in probably no time whatsoever than other recipes require. I did it with green Tomato Pasta and it turned out great. Next time I would like to try it with white potato or potato hash.
