1 tomato, diced
1 cup chopped celery
1 cup chopped onion
1 cup chopped green bell pepper
1 cup chopped celery and bell pepper
1 cucumber, chopped

1/2 cup olive oil
1 red onion, diced
1 teaspoon prepared horseradish
1/4 teaspoon dried Italian seasoning
1/4 teaspoon dried oregano
1/8 teaspoon salt
Heat olive oil in a skillet over medium heat. Stir in tomato, celery, onion, bell pepper, celery and bell pepper. Cover, and simmer for 5 minutes. Stir in celery and bell pepper.
In a measuring bowl, combine tomatoes and vegetables. Pour tomato mixture over vegetables and toss. Chill in refrigerator for at least one hour.
Gently stir horseradish into salad dressing. Add Italian seasoning and oregano. Slowly drizzle over salad, and toss to coat. Add salt and pepper flakes, if desired.
