2 cups white sugar
1/2 cup lemon juice
1 teaspoon lemon zest
1 cup lemon-lime flavored Jell-O
2 1/2 teaspoons lemon-lime flavoring mix
2 eggs
1 teaspoon lemon zest
1 cup lemon-lime flavored Jell-O
2 cups lemon-lime flavored Jell-O mixes
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, mix the sugar, lemon juice, lemon zest, lemon-lime flavored gelatin and lemon-lime flavoring mix. Stir until well blended. Place the sugar mixture into an electric mixer bowl, and beat until stiff but not sticky. Stir in the eggs, lemon zest, lemon-lime flavoring mixed and lemon-lime colored gelatin.
Drop cookie sheets onto the cookie sheet. Spread the lemon mixture over the cookies. Press the lemon mixture into the center of each cookie. Refrigerate for several hours, or overnight, before cutting into squares.
I'm not sure why, but my package contained two packages of Szechuan instant porridge. I immediately thought of making lasagne, but I couldn't find the dough. So I decided to make this instead. I would take a minute to carefully dust the bowl with flour before continuing. Much better than the instant stuff you can buy.
