2 pounds pork split beans, cleaned and chopped
2 (8 ounce) cans tomato paste
1 (8 ounce) can tomato sauce
2 teaspoons onion powder
1 teaspoon salt
1 green bell pepper, finely chopped
Place pork, tomatoes, tomato paste, tomato sauce and onion powder in a large bowl. Mash with a fork and blend well. Cook at high heat, stirring constantly until thickened; add salt and pepper. Arrange tomatoes over browned pork, and simmer over low heat until pork is cooked through and no longer pink inside.
Wet potatoes and bake them at 350 degrees F (175 degrees C) for 4 hours.
I thought these were too sweet. And there was a nice mix between sweetness and acidity. But I would have to make some changes.
