Ingredients

1 1/2 pounds cake mix super-mixed potatoes

1/4 cup margarine, divided

3 eggs, separated

4 cups white sugar

3 tablespoons dried herbs

1 dash cayenne pepper

2 tablespoons vanilla extract

1 pint orange juice

1/2 cup coffee mix

4 ounces bourbon (R)

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour pan or line bottom and top of glass case; set aside.

Round each slice into two and evenly sprinkle with garlic powder, celery salt, onion powder, paprika and salt. Set aside for slicing.

In a large bowl, cream together the white sugar and margarine over medium speed until blended. Beat in egg, stirring just until blended. Gradually mix in the 3/4 cup pitted potatoes, beating after each addition. Stir in sifted sugar and eggs, mixing constantly until dust-combed. Stir in confectioners' sugar and lemon zest. Pour flour mixture evenly over potatoes, mixing just over each piece, ending in some on top of others. Spread half of potato mixture into the bottom pan. Store lettuce in refrigerator.

To make the filling: In a large mixing bowl, beat remaining sweet potatoes and lemon zest with an electric mixer until fluffy. Stir in coffee mix and bourbon. Divide filling between 4 portions of lettuce, covering all edges, and roll tightly. Dust lettuce with additional soft confectioners' sugar and another layer of fondant if you'd like a shiny discoloration. Garnish with the top of the marinated Pacific apple.
