1 large onion, quartered
1 pound potatoes, peeled and cut into 1 inch cubes
4 cups crushed cornflake crackers
1/4 cup chopped green onions
1/4 cup chopped celery
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onions until golden brown. Stir in potatoes, and cook until tender. Stir in cornflake crackers and green onions. Cook until tender. Sprinkle with celery.
Place a large potato mixture in the center of each piece of foil. Lay the onion pieces flat, then wrap the potato mixture around the foil, sealing the edges. Spread each piece of pastry lining the foil over the potato mixture. Place a few slits in the top, then roll the foil over to seal edges. Place the rest of the potatoes on top of the onion mixture. Roll edges of foil around the edges of potato casserole.
Bake at 350 degrees F (175 degrees C) for 1 hour, or until potatoes are golden brown and baking sheets are crispy.
