Easy Pistachio Cheese Pie Recipe

Ingredients

1 (9 inch) unbaked pie crust

3 tablespoons butter

1 cup milk

3 tablespoons white sugar

1 1/2 teaspoons vanilla extract

1 egg

1/4 teaspoon almond extract

1/2 teaspoon lemon extract

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

Directions

Preheat oven to 350 degrees F (175 degrees C).

Over a double boiler, melt butter, milk and sugar.

In a mixing bowl, beat egg, almond extract, lemon extract, flour, baking powder, salt and cinnamon. Divide the batter between 2 pie shells. Spread half of the filling into the bottom of each pie. Press remaining topping on top of filling. Arrange in the middle of your pie. Place toppings on top of pie.

Bake in preheated oven for 40 minutes, until golden yellow. Cool before serving.

I'm not a very good cook yet, and I have trouble controlling when and how much food I put into my body. This recipe worked for me very well, and it is very easy to follow. I would only add that it helps to cool the water down a bit while cooking. Once it was nice and chilled, I removed it from the heat and into an ice water bath. It was still pretty thick, so maybe next time I'll add another can of mushroom soup. Will try with red kidney beans next time.
