Oat Roll Cookies Recipe

Ingredients

1/3 cup butter or margarine

1 cup brown sugar

1 teaspoon vanilla extract

1 teaspoon baking soda

1 cup rolled oats

1 cup brown sugar

1/2 cup raisins

1 cup chopped walnuts

1 cup chopped pecans

Directions

Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.

Spread brown sugar on both sides of the cookie sheet. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

To make the brown sugar glaze: Combine 1/3 cup butter, brown sugar, vanilla and baking soda in a large bowl. Stir together the rolled oats, brown sugar, raisins, chopped walnuts and pecans. Stir into brown sugar glaze; mix well. Pour mixture into chilled cookie sheet; flatten cookie with fork.

I added garlic powder and/or salt when mixing with flour. Word of caution: 1.) With baking powder, it becomes very difficult to bake. 2.) Use a tool such as a wooden spoon to gently press the dough back into the bread. 3.) Avoid putting the dough back in the oven until it is very warm (preferably from the oven side). This allows the flavors to fully mix and develop. It also allows the bread to become stick-y. But the best part is when it is ready and i can easily cut it in half.-hold onto the edges, not the middle.
