1 pound cooked potatoes
8 tablespoons butter
2 teaspoons salt
3 tablespoons baking powder
1 1/2 cups milk
Preheat oven to 350 degrees F (175 degrees C).
Prepare cheese mixture: butter or margarine, milk or warm water, as needed , or season with salt.
Melt potatoes and press slightly into a pot over medium-high heat. Cook until tender but firm, about 30 minutes. Poke two potato sticks with a fork over medium-high heat and gently remove from pot with slotted spoon. Stir in butter, 2 teaspoons of salt and 3 tablespoons of baking powder. Return potatoes to pot, reduce heat to medium-low and simmer in water for 1 minute.
