Chewy Pumpkin Fruit Cake Recipe

Ingredients

1 (18 ounce) container frozen whipped topping

1 (3 ounce) package instant vanilla pudding mix

1 cup pumpkin

2 cups crushed potato chips

1 (15 ounce) can pumpkin slices

Directions

In a large bowl, mix whipped topping, pudding mix, pumpkin, potato chips, and pumpkin slices. Chill in refrigerator.

Preheat oven to 350 degrees F (175 degrees C).

Place cakes in 9 inch round pans. Bake in preheated oven for 20 minutes. Turn halfway through the baking time and place on a wire rack to cool. Cool completely, remove from pans, and store in refrigerator.

Had to use 2 strawberries and thanks for the recipe, I only use 2 strawberries, too. The fruity Raspberry Choc Cake is the real treat here, not the dried fruit. I fear I'll never get the raspberry part right! I've used other recipes for chopped berries, too, and they usually fail to combine until too late. If you're looking for a finely mown cake, not the average wipe cake, try different berries and different fruits. You might just find your favorite!
