6 scoops vanilla flavored coffee flavored coffee granules
1 cup white sugar
1/2 cup shortening
1 teaspoon baking powder
1/2 teaspoon baking soda
1 egg
1/3 cup vegetable oil
1/3 cup brown sugar
1/4 cup raisins
1 cup chopped pears
1 cup chopped walnuts
In a coffee canister or coffee mug, mix coffee granules, sugar, shortening, baking powder, baking soda, egg and oil. Pour into the trays and chill overnight. The next morning, remove coffee from coffee canister and place in the refrigerator on a serving platter. Refrigerate for 2 hours.
In a large bowl, mix brown sugar, raisins, pears and walnuts. Beat egg and vegetable oil into the brown sugar mixture, stirring until blended. Chill mixture in refrigerator.
Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners. Grease 12 muffin cups or line with paper muffin liners.
Place muffins in pan. Press muffins evenly to evenly brown. Bake 10 minutes in the preheated oven, filling muffins with brown sugar.
