1 3/4 cups granulated sugar
1/4 cup water
1 tablespoon lemon juice
3 tablespoons lemon zest
1 tablespoon peach preserves
1 teaspoon lemon zest
1 teaspoon peaches (optional)
In a saucepan, combine sugar, water, lemon zest and lemon zest. Bring to a boil. Stir in peach preserves. Reduce heat to low and simmer gently. Remove from heat and let cool for a few minutes, stirring and scraping up lemon zest into the saucepan. Return to a boil and stir in lemon zest, peach preserves and lemon zest. Cook, stirring constantly, for about 30 minutes, stirring occasionally. Return mixture to a simmer and add sugar, peach preserves, lemon zest, peaches if desired. Cook for about another 30 minutes.
