3/4 cup lemon juice
1/2 cup vegetable oil
1/2 cup white vinegar
1/2 cup distilled white vinegar
3 tablespoons white sugar
1/2 teaspoon salt
6 tablespoons distilled white vinegar
6 small onions, peeled and cut into thin strips
3 tablespoons distilled white vinegar
1 teaspoon peppermint extract
1 teaspoon dried oregano
In a large bowl, mix lemon juice, vegetable oil, distilled white vinegar, white vinegar, sugar, salt, salt, distilled white vinegar and peppermint extract. Pour mixture into a large plastic bag.
To assemble, mix chicken pieces, salt pork, onion, mustard, oregano, mint leaves and orange zest. Refrigerate until serving time. Cover and refrigerate for at least 2 hours to allow flavors to develop.
