2 eggs
1 1/2 cups milk
2 bananas, sliced
1 teaspoon vanilla extract
1 1/2 teaspoons lemon extract
1 tablespoon apricot preserves
Preheat oven to 350 degrees F (175 degrees C). Room temperature milk chocolate cake mix
Heat oven to 375 degrees F (190 degrees C). Beat eggs in mini mixer bowl until frothy. Mix together with milk and bananas, then beat in the vanilla, lemon extract and apricot preserves using an electric mixer. Pour batter into muffin pan.
Bake in preheated oven for 41 minutes. Remove from oven and wire rack to cool completely. Cool completely before opening.
