1 teaspoon salt
1/2 teaspoon ground black pepper
1/3 cup olive oil
1 cup chicken broth
1 onion, cut into 1/4 inch slices
5 green onions, sliced into 1 inch layers
1 large carrot, cut into 1/4 inch slices
1 (10.75 ounce) can condensed cream of chicken soup
2 tablespoons olive oil
Heat oil in a large saucepan over medium heat. Stir in chicken, onion, carrot, green onions and 1/4 cup sliced onions. Cook for about 5 minutes, stirring constantly. Remove chicken and vegetables, and set aside.
Serve chicken mixture over rice, carrots and vegetables.
