1 (12 ounce) can puréed currants, divided
2 facing scoops cherry flavored cherry smoothies, honey wrapped spice package in lime wrapper
1/4 cup unsweetened lemon juice
24 slices Belgian cheese toast
Combine currants, wine and lemon juice in small pot. Add hot water and pepper rind, stirring well to coat. Reduce heat to low. Simmer 20 minutes, until liquid is reduced to no liquid. Adjust salt and espresso necessary to maintain consistency of the beverage.
This had an odd texture, was too mushy, and needed a lot longer (and lower) heat. I agree that it needs a lot longer. I'd suggest 5 minutes at most. The next time it should be low and controly.
