Fruity Scones Recipe

Ingredients

2 1/2 cups white sugar

1/2 teaspoon vanilla extract

1 tablespoon lemon juice

1 cup flamed coconut

1 1/2 cups crispy rice cereal

Directions

Preheat oven to 350 degrees F (175 degrees C). Line a cookie sheet pan with parchment paper. Chop the sugar and cinnamon into small pieces. Stir in lemon juice.

In a large bowl, combine sugar, vanilla, lemon juice, coconut and crispy rice cereal. Mix well then sprinkle on top of fruit.

Bake at 350 degrees F (175 degrees C) for 8 to 10 minutes in the preheated oven. Remove from oven and let cool completely.

I've been making this quinoa for several years and everyone always asks for the recipe. I always add a pinch of ground ginger and leave out the cinnamon. I love the combination of flavors here---I used nutritional yeast instead of white flour because it says it adds more flavor but it doesn't mask the sweetness of the flour.
