2 1/2 cups white sugar
1/2 teaspoon vanilla extract
1 tablespoon lemon juice
1 cup flamed coconut
1 1/2 cups crispy rice cereal
Preheat oven to 350 degrees F (175 degrees C). Line a cookie sheet pan with parchment paper. Chop the sugar and cinnamon into small pieces. Stir in lemon juice.
In a large bowl, combine sugar, vanilla, lemon juice, coconut and crispy rice cereal. Mix well then sprinkle on top of fruit.
Bake at 350 degrees F (175 degrees C) for 8 to 10 minutes in the preheated oven. Remove from oven and let cool completely.
