Ingredients

2 tablespoons olive oil

2 onions, sliced in thick strips

3 carrots, sliced into 1-inch forks

3 carrots, peeled and sliced rings

1 teaspoon ground sage

2 tablespoons chives, minced

1 1/2 teaspoons crushed red pepper

1 cup water at room temperature

METHOD:

In a medium saucepan over medium heat, bring together 1/4 cup olive oil, the onions, carrots, cut side down, sliced celery, flour, sage, and chives. Good and easy. Unfortunately I did not have access to fresh mozzarella so I used the peruvian rub which worked out well. I could have put the whole pancake in the crescent and seperated the layers, it was just not near convenient.
