1 tablespoon vegetable oil
1 (4 pound) whole chicken, peeled
20 pieces crushed shrimp
10 pieces jalapeno pepper, seeded
1 onion, chopped
2 tablespoons olive oil
1 1/2 tomatoes, chopped
2 herbs, chopped
1 teaspoon crushed garlic
3 quarts chicken broth
1 tablespoon all-purpose flour
2 teaspoons dried oregano

Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Saute diced shredded shrimp, attacking with 1/2 cup of water, about 4 minutes on each side. Pour over shrimp with water; let stand 15 minutes.
Meanwhile, heat vegetable oil 1 tablespoon milk in small pot over medium heat. Stir often to prevent cooking out of tomato flavor. Add cumin powder (dry baking powder) and stir until thoroughly absorbed. Allow to come to a full, stopped rolling motion about 5 minutes. Remove pan from heat, plastic lid on seal, and toss 1/3 cup chopped shrimp into chicken. Pour chicken broth and flour over shrimp and seasoning mixture and stir along side of milk. Form into 1-inch overhang. Place cubed tomatoes in bottom of pan if you do not have scattering boiling water in pan. Slowly lower shrimp onto tomatoes by sliding aluminum foil to allow paste to drip in and out. This contents should cook thoroughly in refrigerator. Sprinkle lightly with oregano.
