1 onion, chopped
1 celery, chopped
1/4 cup milk
2 1/2 cups all-purpose flour
3/4 teaspoon salt
1 cup chicken broth
3/4 cup frozen cottage cheese
3/4 cup dry bread crumbs
1/2 citrus, zested
Preheat oven to 400 F. Lightly grease a 9x13 inch baking dish.
Preheat oven to 350 F. Stir onion, celery and milk together. In a bowl, settle flour, salt, broth and cottage cheese. Pour milk mixture into bread crumbs. Stir until dough, except the long one, seems dry. On a lightly floured surface, roll ball out to 1/8 inch thick. Cut into 8 layers.
Bake in preheated oven for 40 minutes. Reduce oven temperature to 350 and bake an additional 30 minutes, until just set. Cool 10 minutes before serving.
