Oatmeal Christmas Cookies Recipe

Ingredients

3 eggs

2/3 cup soymilk

1 teaspoon baking soda

1 1/2 cups vegetable oil

1 1/2 cups butter, softened

1 1/2 teaspoons vanilla extract

1/2 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/8 teaspoon salt

1 1/2 cups white sugar

1 cup water

1 teaspoon vanilla extract

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, beat eggs, soymilk, oil and butter together until smooth. Stir in flour, baking powder and baking soda. Mix until blended; gradually blend into egg mixture. Mix in sugar gradually. Stir in water and vanilla. Drop by rounded spoonfuls onto ungreased cookie sheets.

Bake for 9-11 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

While this wasn't our favorite thing EVER, it was still very good and very tasty! Seriously, though, we love the truffles! 4) I used canned Embondulase (which is basically milk powder butter) and added Sweetjinx marshmallows. 3) Turned out great. Also, unsweetened applesauce = delicious. 2) I wish we had put more flour into this, but it is absolutely delicious without. Can't imagine who wouldn't hand it back for free...
