1/2 cup mayonnaise
1/8 cup lemon juice
1/8 teaspoon salt
1/4 cup frozen lemonade concentrate (Shirley's Lemonade)
1 1/2 cups sliced peaches
2 tablespoons butter
2 eggs, beaten
1 cup shredded Cheddar cheese
1/2 cup sliced almonds
2 tablespoons water
1/4 cup chopped pecans
2 tablespoons trans-fat free mayonnaise mixture for dipping
2 teaspoons orange juice
Combine mayonnaise, lemon juice, salt and lemonade concentrate in a small bowl. Mix gently. Coat a small bowl or pitcher or saucepan with butter or margarine. Place a portion of the peach mixture over the peach mixture. Dip filling into mayonnaise mixture and then dip into lemon juice mixture. Fill and the top of each peach with pecans and cheese. Secure with a toothpick.
Peach filling: Heat mayonnaise in a small saucepan, stirring occasionally, until slightly yellow.
Prepare berries in small saucepan, shaking to stir: Stir together with lemonade concentrate. Pour peach filling into berries and stir in mayonnaise mixture.
Pour dressing and mayonnaise mixture into peach jelly rolls. Cool thoroughly.
