3/4 cup finely chopped onion
2 tablespoons brown sugar
1 tablespoon dried minced shallots
1/4 cup dried red pepper
1 cup water
1/4 cup olive oil
1/2 teaspoon paprika
Lightly oil a large skillet.
Dredge onion and brown sugar in flour; set aside.
Mix brown sugar, shallots, pepper, 2 cups water, olive oil and paprika in a large saucepan. Bring to a simmer and reduce heat. Cover and bring to a boil; reduce heat and simmer 50 minutes.
Dredge bread cubes in flour and stir in about 1/2 cup olive oil and sugar mixture to make a roux. Place bread cubes in open cheese dish, overlapping to keep the bread from sticking. Sprinkle with paprika and top with sliced bread. Top with tuna and olives.
Place steak in skillet and cook on medium heat for about 5 minutes. Remove from heat and set aside.
