Jenny's Baked Oatmeal Raisin Bread Recipe
1 cup rolled oats
1/2 cup butter
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 cup shortening
1 egg, beaten
1/4 cup milk
1/4 cup white sugar
1/2 cup dried apricots
1/3 cup brown sugar and molasses
2 teaspoons baking powder
1 pinch ground nutmeg
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch pie pan.
In a medium bowl, stir together the oats, melted butter, flour, salt, shortening, egg, milk and 1/2 cup sugar. Stir together, using a wooden spoon, to form a ball out of the dry ingredients. Add the apricot preserves, nuts, cookies and 1 teaspoon baking powder. Turn dough out onto a lightly floured pan. Pour half the warm milk over the wet mixture and gently press the mixture through a sieve into a bowl glass full of cold water. Cover, and let rest at room temperature for 7 to 10 minutes.
Sprinkle the entire loaf with 1/3 cup brown sugar and 2 teaspoons baking powder, and place in a shallow baking pan. Flour the bread and bake at 350 degrees F (175 degrees C). Cover, and continue baking at 350 degrees F (175 degrees C) for 1 hour or until a toothpick inserted comes out clean.
