Cocoa Nut Bread Recipe

Ingredients

1/2 cup butter, softened

2 1/2 cups white sugar

2 eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 teaspoon baking powder

1 cup all-purpose flour

3/4 cup milk

1/2 cup pre-sweetened orange juice

1 1/2 tablespoons cornstarch

1 teaspoon lemon juice

4 teaspoons orange zest

Directions

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan. Sift together the flour, baking powder, baking soda, baking salt, cinnamon, nutmeg, and nutmeg salt; set aside.

In a large bowl, cream together butter, sugar, eggs, vanilla, flour, baking soda, salt and cinnamon. Mix in the flour mixture. Stir in the flour mixture along with milk, orange juice, cornstarch, lemon juice and orange zest. Pour batter into prepared pan.

Bake in the preheated oven for 90 minutes, or until a toothpick inserted into the center of the loin comes out clean. "Remove loaf from pan," 8 minutes before turning out of pan. Cool loaf on a wire rack. Unroll loin on a rack. Cool completely before cutting into squares.
