3 1/2 cups quick cooking oats
1 cup mayonnaise
2 tablespoons brown sugar
1 teaspoon vanilla extract
1 1/2 teaspoons lemon juice
3 cups packed light coconut
1/3 cup vegetable oil
3 tablespoons lemon juice
Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x5 inch loaf pan.
In a large bowl, combine oats, mayonnaise, brown sugar, vanilla extract and lemon juice. Mix until well blended. Pour batter into prepared pan.
Bake in preheated oven for 25 minutes. Remove pan from oven. Cool until lukewarm. Serve warm or cold.
