1 chicken, cubed
1 (4 ounce) can crushed pineapple
1 cup diced celery
1 (3 ounce) bottle lemon-lime flavored carbonated beverage
1 green bell pepper, chopped
2 onions, chopped
2 slices bacon
1 (6 ounce) can cherry pie filling
1 (2 ounce) can pineapple juice concentrate
1 (8 ounce) package cream cheese, softened
2 tablespoons distilled white vinegar
2 cups chopped cooked chicken breast meat
2 tablespoons lemon juice
1 (1 ounce) package lemon-lime flavored carbonated beverage
Heat oven to 350 degrees F. Toss chicken with crushed pineapple, celery and lemon-lime soda. Pour over chicken and pineapple in 8x8 inch baking dish; sprinkle with bacon and onion. Cover; bake 15 minutes. Sprinkle with hispanic seasoning; turn to coat. Cover; bake 15 minutes longer. Remove chicken; sprinkle with lemon-lime soda. Place over chicken and pineapple. Bake 15 minutes longer or until chicken is tender and juices run clear.
