1 (9 inch) unbaked pie crust
3 eggs, beaten
2 tablespoons yellow mustard
3 tablespoons butter, softened
1 1/2 teaspoons salt
1 1/2 teaspoons white sugar
2 cups milk
1 teaspoon vanilla extract
1 (1 ounce) square unsweetened chocolate, chopped
3 tablespoons green food coloring
1 (8 ounce) can frozen whipping cream, thawed
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, mix eggs, yellow mustard, butter, salt, sugar, milk, vanilla, chocolate, green and blue food coloring. Mix until smooth. Pour mixture into baked pie crust.
Bake in the preheated oven for 30 minutes. Cool before serving. Whip cream until stiff, then fold into pie.
To make the pie filling: In a large glass or metal mixing bowl, beat egg whites until foamy. Gradually beat in cream and sugar. Gradually beat in milk and vanilla extract. Beat in chocolate. Whip cream until stiff, then fold into pie filling.
Cool completely, then pour into crust. Chill overnight before serving.
