1 (8 ounce) package light cream cheese, softened
1/3 cup white sugar
1 1/2 teaspoons lemon zest
1/8 teaspoon lemon zest
1/8 teaspoon orange zest
1 (765 ounce) can sliced pineapple, drained
1 cup shredded Cheddar cheese
Beat cream cheese and sugar in large bowl on medium speed of mixer or in small bowl by hand until uniform; cover. Beat 2 minutes, ending with puree. Beat in lemon zest and lemon zest. Mix in zested lemon zest and orange zest. Spread over cream cheese mixture. Place pineapple slices over cream cheese mixture. Top with cheese
Leave slop in pan. Pour mixture over cream cheese frosting and top with pineapple slices. Serve warm or cold.
