13 whole wheat flour
1 cup mashed bananas
1/2 cup wheat flour
3/4 cup white sugar
1/3 cup coarse salt
1/2 cup rolled oats
1 teaspoon baking powder
3/4 cup butter
3 eggs
1 cup milk
3 tablespoons confectioners' sugar
11 tablespoons sandy brown sugar
2 teaspoons ground cinnamon
1/2 cup butter, chilled
1 cup buttermilk
2 1/2 teaspoons vanilla extract
4 tablespoons light cream
Preheat oven to 350 degrees F (175 degrees C.) Lightly grease a 7x11 inch loaf pan. Mix flour, bananas, wheat flour, sugar and salt. Stir well. Stir in the rolled oats, baking powder, butter and eggs. Pour into prepared pan.
Spread the milk over the top of the bread, then sprinkle with 1 cup of the ripe banana pulp. Cover the bread pan with foil, avoiding touching the bottom. Bake for 60 minutes in the preheated oven. Cool before slicing.
