Carolina Pork Roast and Tenderloin Recipe

Ingredients

1 (6 ounce) can tomato boiled

3 potatoes peeled and cubed

1 small onion, diced

2 cloves garlic, minced

1 cup soy sauce

1 cup distilled white vinegar

salt and pepper to taste

Directions

Coat a foil-lined 10x15-inch baking dish lightly with cooking spray. Arrange boiled potatoes on top of the dish. But place 1 small onion and the garlic cloves in the bottom of the dish. Place tomatoes, onions, garlic, and soy sauce in the top of the dish. Sprinkle the salt and pepper over the ingredients.

Cover and refrigerate for 8 hours, turning once, allowing all flavors to blend.

Preheat oven to 350 degrees F (175 degrees C).
