1 cup butter, softened
1 cup white sugar
2/3 cup honey
1/2 tablespoon distilled white vinegar
1 teaspoon vanilla extract
Preheat oven to 400 degrees F (200 degrees C). Lightly grease cookie sheets.
In a large bowl, cream together the butter, sugar, honey, vinegar, vanilla and confectioners' sugar. Stir until light and fluffy. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 9 to 11 minutes in the preheated oven, until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
