2 skinless, boneless chicken breast halves
1 tablespoon vegetable oil
2 tablespoons ketchup
1/2 teaspoon chili powder
1/4 cup minced onion
1 cup chopped green bell pepper
1 cup chopped Cajun seasoning
1 cup sour cream
2 tablespoons Cajun seasoning
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1 (10 ounce) can diced tomatoes with green chile peppers (optional)
Heat oil in a large skillet over medium heat. Add chicken and fry for about 5 minutes on each side or until golden brown. Remove chicken from skillet and set aside. Heat ketchup and chile powder in medium bowl until slightly thickened. Stir in onions, green peppers and Cajun seasoning. Mix well and pour into skillet. Sprinkle with sour cream, then spoon into skillet. Stir in cabbage, tomatoes and celery salt. Bring to a boil and reduce heat to low. Cook over medium heat for about 5 minutes, stirring occasionally. Reduce heat and simmer for about 45 minutes, stirring occasionally.
