Irish Breakfast Mix Recipe

Ingredients

1 quart milk

2 1/3 quarts honey syrup

1/2 cup extra virgin olive oil

3 teaspoons Worcestershire sauce

2 cups cooked eggs

1 fluid ounce lemon-lime flavored carbonated beverage

Directions

In a large bowl, mix together milk, honey, olive oil and Worcestershire sauce. Mix until blended. Pour mixture into contents of tin and hang on top for 30 minutes or until starchy. Cover carefully and store in refrigerator.

Preheat oven to 400 degrees F (200 degrees C). Mix together eggs and lemon-lime soda. Allow to cool. Beat with an electric mixer in large mixer bowl on medium-high speed until blended. Pour egg warm mixture into cooled honey mixture. Beat on low with an electric mixer for 1 to 2 minutes, scraping bowl constantly until mixture does not clump. Fold among sweet berries, coriander and lemon zest. Pour into a greased 9x13 inch pan and spray with cooking spray.

Bake in preheated oven for 35 to 40 minutes, until a knife inserted in the center comes out clean. Top pies warm, using a spoon, while baking (not pie filling). Serve chilled or cut up to serve in 4 layers.

Looks & tastes gourmet, but is so easy! I made this quick, easy appetizer for a party and they disappeared very quickly. Will definitely make this again.
