1 cup smooth cooking crackers
1 cup honey, honey granulated
1 cup fresh lemon juice
1 cup packed brown sugar
2 cooked egg whites
1 teaspoon lemon zest
24 fluid ounces milk
salt and pepper to taste
Preheat oven to 350 degrees F (175 degrees C).
Melt cracker crumbs in a small bowl. Stir together, honey, lemon juice, brown sugar, egg whites, lemon zest and milk. Pour mixture into greased pie pan.
Bake in preheated oven for 10 minutes, until lightly browned. Place on rack in top of larger pan to cool completely.
Stir pan juices from pan into pie pan, removing slivers of fruit. Cool slightly before removing from pan.
