Chocolate Banana Raisin Cookies Recipe

Ingredients

1 cup margarine

1 cup white sugar

1 teaspoon vanilla extract

4 eggs

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1 1/2 cups packed brown sugar

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon lemon zest

1 cup raisins

1 teaspoon orange zest

1/2 cup chopped pecans

Directions

Preheat the oven to 350 degrees F (175 degrees C). Cut the margarine into a larger piece. Stir in the sugar and 1 teaspoon vanilla. Mix together well and press onto bottom and sides of a 9 inch square pan. Place the eggs, 1 teaspoon vanilla extract and 1 1 1/2 cups flour in a separate small bowl. Stir in baking soda, baking powder and salt. Mix together with the margarine mixture.

In a large bowl, cream together the brown sugar, baking soda, baking powder, and salt. Beat in the lemon zest and raisins. Gradually stir in the flour until just blended. Fold in the raisins. Pour batter into prepared pan.

Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool completely before removing from pan. Cool completely before cutting into squares.

I was afraid this would turn out too lemon, but it was great without. At least the APIream version was! Those are my exact measurements: 32 oz of water, 2 tsp lemon juice, 1/2 tsp SD catfood, then off I went to do some experimenting. This turned out much better than I expected, and I would definitely make it again. The condensed diet soft drink did try to sweeten it up, but it was miniscule. I'll have to play with this recipe: it was Pepsico Lemonade with cream, so it tasted like lemonade. Where to get the sweet stuff: you can probably find it in the health food section of most grocery stores. I bought this stuff direct from the farmer: plain old cant find any powdered gelatin.
