1/2 cup tartar, divided
1/2 cup white sugar
1 egg, lightly beaten
1 cup light brown sugar
1 teaspoon vanilla extract
1 cup whole wheat flour
1 cup packed brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon light corn syrup
1 cup crushed pineapple, drained
2 cups sliced strawberries
Preheat oven to 375 degrees F (190 degrees C). Divide tartar into 2 layers. Place the brown sugar in a saucepan and mix with the egg and brown sugar. Bring to a boil, stirring constantly, until mixture is thickened. Remove from heat and stir in the vanilla and whole wheat flour. Spread mixture evenly into muffin cups.
Bake in preheated oven for 20 minutes, or until crisp. Pour brown sugar mixture into brown sugar-coated muffin cups.
In a small bowl, beat crushed pineapple, strawberries and lemon juice into brown sugar mixture. Serve warm.
