Barbecue Rub, Peppers, Cream and Tomato Stacks Recipe

Ingredients

4 tablespoons vegetable oil

1 onion, finely chopped

1 pound bacon, chopped

6 pounds white meat chuck

1 cup chopped onions

1 teaspoon salt

2 1/2 cups all-purpose flour

1 teaspoon ground black pepper

2 eggs, beaten

6 cups crushed cornflake cracker crumbs

Directions

Heat oil in large saucepan to 375 degrees F (190 degrees C). Roll sausage in 1 tablespoon oil. Place in medium skillet with grease and water. Cook over medium heat until browned, about 5 minutes. Drain off grease.

Place onion in pot. Pour onion oil into skillet and cook over medium heat until golden brown, about 10 minutes. Stir in bacon, salt, sugar, bell peppers, onions, tomatoes, 1/2 cup flour, pepper, eggs and cracker crumbs. Blend until thoroughly coated. Cover and simmer over low heat until thickened, about 40 minutes.
