10 chicken breast halves
1 (1.75 ounce) package Italian seasoning blend
1 onion, diced
1 stalk celery, diced
3 carrots, halved and cut into 1/6-inch slices
1/2 cucumber
1/2 cup black olives, halved
3 stalks celery, diced
1 cup chicken broth
In a medium bowl, mix the Italian seasoning blend and vegetable broth. Stir in the chicken breasts, onion, celery, carrots, cucumber, olives, chicken broth and add water if necessary. Return to a boil after 15 minutes and continue to cook 15 minutes more.
Stir the chicken mixture into the bowl - using handles to prevent sticking. Stir until the liquid is reduced to a thick gravy. Cover and let simmer for 30 minutes. Reduce heat and simmer for 5 minutes to allow the chicken to absorb the flavors of the broth and reduce to a soup.
