1 (8 ounce) package instant lemon pudding mix
1 cup milk
3 bananas, sliced
3 eggs, beaten
2 cups butter, softened
1 cup white sugar
1 1/2 teaspoons lemon zest
In a medium bowl, mix pudding mix and milk. Stir until smooth.
Heat oven to 350 degrees F. Fold bananas into pudding mixture. Pour lemon zest over bananas.
Bake in preheated oven for 10 to 15 minutes, or until bananas are tender. Serve hot or cold.
