4 eggs
3 cups white sugar
2 (3 ounce) packages instant vanilla pudding mix
1 tablespoon vegetable oil
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
3 cups milk
1/4 cup lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla extract
1 small orange, sliced into rounds
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
Beat eggs and sugar in small bowl until well blended. Stir in pudding mix and oil. Stir gently into dry ingredients. Fold batter into prepared pans.
Bake in preheated oven for 75 minutes, or until a toothpick inserted into center of pan comes out clean. Allow to cool completely.
To make the Lemon Glaze: In a small bowl, mix lemon juice, lemon zest and lemon zest. Mix thoroughly into dry ingredients. Whip egg until thickened. Spread frosting frosting over top of cake while warm.
