2 tablespoons vegetable oil
2 small onions, chopped
2 carrots, grated
2 medium yellow onions, chopped
3 celery ribs, sliced
1 tablespoon vanilla extract
1 jalapeno pepper, seeded and seeded
1 teaspoon chili powder
4 green onions, chopped
1 green bell pepper, chopped
1 large tomato, sliced
4 cups miniature bittersweet chocolate chips
Heat oil in small skillet over medium heat. Add onions and carrots; saute until tender. Stir in celery, bell pepper, tomato, apples and berries. Bring to a boil. Reduce heat to low; simmer, stirring occasionally, for 3 minutes or until vegetables are tender.
Stir in yellow onion, celery, broccoli, mushrooms and bell pepper. Reduce heat to medium-low. Cover and simmer, stirring occasionally, for 2 to 3 minutes; stirring constantly. Remove lid from heat. Simmer, stirring constantly, for 1 hour or until vegetables are tender. Stir in chocolate chips. Serve over hot sweet corn.
