6 small Yukon Gold potatoes, peeled and cubed
1/4 onion, thinly sliced
1 cup honey
1/2 cup white sugar
1 teaspoon Worcestershire sauce
2 tablespoons water
1 1/2 teaspoons pepper
Place the potatoes in a large pot with water to cover and bring to a boil; boil for about 30 minutes. Reduce heat to low and simmer, covered, for fifteen minutes. Add the onions and slightly grease the bottom of the pot. Peel the potatoes and place them into the pot; add water to cover. Simmer for about four hours.
Lightly grease the bottom of a large resealable plastic bag. Place the Yukon Gold potatoes into the bag. Cover with the onion and honey. Place the white sugar, Worcestershire sauce and water in a small resealable plastic bag. Stir to coat. Place the pot on low heat. Heat under medium heat for approximately one hour. Remove the bag from the pot. Using a sharp knife or serrated knife, cut from bottom up into small strips about 1 1/4 inch thick.
